Observed ham, turkey, roast beef, diced chicken and provolone, pepper jack, shredded cheese, American, and tuna with an internal temperature of 46-52*f in furthest left prep table. Shredded chicken and beef had been stocked within 20 minutes prior to inspection and employee voluntarily discarded. According to employee remainder of TCS foods had been stocked more than 4 hours prior to inspection and were discarded at time of inspection. Employee was instructed to restock small portions in ice baths to prevent rise in temperature but refused to and restocked all new product on the make table holding ambient air temperature of 59*F.
