According to employee spicy tuna was made within 1 hour prior to inspection and moved to walk-in cooler to rapidly chill. Discussed approved thawing methods and also discussed monitoring cold TCS foods to ensure they are stored at 41*f and below in cold holding equipment. Observed pH of acidified rice ranging from 4.2 and above. Maximum threshold is pH of 4.1 and below. Through pH Meter calibrating exercise, it was determined that the employee was cooking 12 cups of rice to 3 cups of vinegar. Per instructions, 12 cups of rice require 4 cups of vinegar to ensure acidity is no more than 4.1 to prevent bacterial growth. Trained employee how to properly calibrate pH Meter and how to properly make acidified batch of rice. Employee discarded batch of rice at time of inspection. Corrective Action: Corrected at time of inspection.
