Per PIC, pizza is held under time as a control but there was not documentation of when pizzas were cooked. When using time as a control, the time pizzas came out of the oven need to be written down and then should be discarded after no more than 4 hours. PIC stated they usually hold the pizzas for 1 hour. PIC set a time to discard pizzas.
