Inspector's notes

Observed three compartment sink to have sink and surface sanitizer with a concentration exceeding manufacturer allowable range, test strip turned a yellow color not on test strip color comparison chart. Sanitizer was diluted until it had a concentration within manufacturer specifications. PIC will call for repair and will ensure sanitizer is diluted and tested to remain at proper concentration. Recommend all items that may have been cleaned with unapproved concentration of sanitizer be re washed rinsed and sanitized.

Observed ware washing machine in bar area to be providing a chlorine concentration of 0PPM and a maximum temperature of 110*F. Observed two bottle of detergent and one bottle of rinse aid hooked up to machine tubing, with no sanitizer. Person in charge will call for repair. Do not use this unit until it is properly sanitizing. Recommend everything that may have been cleaned in this unit be re cleaned in ware washing machine in kitchen (with correct high temperature achieved for sanitizing) or three compartment sink (with correct chemical concentration for sanitizing).
