Observed packages of raw chorizo and raw bacon inside open face cooler across from front counter stored above ready-to-eat (RTE) vegetables and fruits. All raw animal proteins shall be stored below RTE foods and stored according to cooking temperature at all times to prevent cross contamination. Person in charge (PIC) properly stored all raw chorizo and raw bacon according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed 51°F internal temperature of shredded cheese, 50°F internal temperature of packaged raw chorizo, and 51°F internal temperature of packaged raw bacon, per probe thermometer, inside display cooler next to walk-in cooler. Per person in charge (PIC), display cooler temperature was observed at 41°F three hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to walk-in cooler to rapidly cool to 41°F at time of inspection. Display cooler next to walk-in cooler that held TCS food items will now be used to only store Non-TCS foods. Reach-in cooler, verified to hold 38°F per min/max thermometer, across from cash register will now be used to store TCS foods. Corrective Action: Corrected at time of inspection.
