PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. Observed fried and grilled chicken being hot held in reach in unit with an internal temperature measuring between 120-150°F. When asked, employee stated that the food was cooked and placed in the unit around 11 am (less than 2 hours). Heating unit was turned off and had low water level, the unit was turned back on and more water was added to the unit. Food was reheated to 165°F and shall continue to be held with an internal temperature of 135°F or greater. Correct By: Corrected At Time Of Inspection
