Educated PIC that all shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. PIC removed shut-off downstream from atmospheric vacuum breaker at time of inspection. Corrected at time of inspection.

Inspector's notes

Observed tubs of blanched fries stacked on cases of potatoes near the 3-compartment sink registering internal temperatures ranging between 72°F-80°F. Per manager, they were placed in the tubs and cooled at room temperature beginning at 11am, 4 hours prior to the time of inspection. Cooked Time/Temperature Control for Safety (TCS) foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. The manager voluntarily discarded the fries at the time of inspection. Corrective Action: Corrected at time of inspection.
