PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals At time of inspection, observed the sanitizer in the three compartment sink at a concentration of 500+ ppm while bieng used to sanitize dishes. Quat solution for food contact surfaces must be kept at 150 ppm to 400 ppm as stated on the bottle. Solution was re-diluted to a concentration of 400 ppm. Dishes were re-washed. Upon inspection of the small reach in cooler in the side storage room, observed a container of hardboiled eggs at 50*F. Per manager the eggs had been in the unit for a few days. The unit was holding at 48*F on inspectors min/max thermometer. Eggs were embargoed. All temperature controlled for safety (TCS) foods in cold holding are required to be held at or below 41*F.
