The person in charge stated that projects are still being worked on including: 1. Hot water temperature in employee restroom is 85 degrees F. Ensure hot water temperature at handwashing sink is a minimum of 100 degrees F. 2. Isolate glass rinser reduced pressure principle zone assembly (RPZ) backflow preventer from espresso machine and and ice machine. Route water line directly from RPZ backflow preventer to glass rinser. Relocate separate water supply lines for espresso machine and ice machine upstream (left) of RPZ backflow preventer. 3. Install an ASSE 1022 dual check backflow preventer between the water supply and espresso machine. 4. Test/certify RPZ backflow preventers for glass rinser and ice cream machines. 5. Install splash guards at front prep area handwashing sink.

Observed cooked individual cookies and pastries packaged on the counter top for retail sale. The products had no labels. The person in charge stated that the product came from a local fixed establishment. Discussed with the person in charge that the products should be labeled with the following information: 1) Name of Product; 2) Processor Name; 3) Processor Address or Phone Number; 4) Ingredients; 5) Approximate Weight; 6) In English). Corrective Action: Correct prior to next routine inspection.

In the reach in freezer, observed various bags of dairy gelato base at 46-55*F. All gelato base had been in the unit for over 4 hours. Per the only employee on duty, no temperatures of the unit or gelato were taken today. Employee was not sure when the unit would have started to rise out of temperature. Foods that were above 41*F were embargoed. Foods that were below 41*F were moved to working coolers. Corrective Action: Corrected at time of inspection.
