In the reach in unit in the back hallway, observed a bag of various cubed cheeses at 64*F, Mozzarella cheese at 62*F, Feta Cheese at 54*F, prosciutto at 60*F, and Salami slices at 51*F. All cold holding, temperature controlled for safety (TCS) foods are required to be kept under 41*F. Foods that were in the unit overnight were embargoed. At time of inspection, reach in cooler in the back hall was holding at 56-58*F on inspector's min/max thermometer while being used for TCS foods. All cold holding units used for cold holding TCS foods are required to be able to hold under 41*F. TCS foods were removed and establishment will not be using TCS foods until repaired.
