Obseved cooled rice in upright refrigerator in kitchen at 47*F. Cold hold of food t be at 41*F or lower. As per the person in charge the rice was prepared the day before. Rice was discadrded as time of inspection. Observed green salsa, red salsa in the same refrigerator at 43-44*F/ These items were placed in separate cooler to chill back to 41*F. Advised staff to use their metal stem thermometer to check cold food temperatures during operation. Corrective Action: Corrected at time of inspection.

Observed chicken, beef, al pastor, tripas at warmer at 125 - 130*F. Hot hold of food must be kept at 135*F when being held hot. As per the person in charge the items were cooked and placed in warmer at approximately 12:30pm - 1:00pm. Items were reheated at grill to 165*F at time of site visit. Advised person in charge to check hot hold temperatures with a metal stem thermometer during the day to ensure food remains at 135*F or greater. Corrective Action: Corrected at time of inspection.

Proteins are cooked at beginning of day and anything remaining at end of day are discarded. Items such as salsas and cut produce are prepared daily. Until cooler is repaired person in charge will keep TCS food products on site at a minimum and all food will be prepared and used within same day as the current refrigeration capacities is not adequate for cooling.

Inspector's notes

Two-door cooler is kitchen had the following TCS items measuring an internal temperature of 49-51'F: beans, various salsas, rice, shredded cheese, cut vegetables, raw beef, and raw shell eggs. Per person in charge all items had been purchased and placed into cooler earlier in day, approximately 3 hours prior. Person in charge began to move TCS foods to other refrigeration. Ambient air temperature measured 56.3'F with min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
