PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. The datemark on the food indicated that chicken was prepared prior to the date of inspection and has been held longer than 24 hours out of temperature. Food was embargoed. PIC and Deli manager discarded the chicken at the time of inspection. The cooler in question was observed to be at 46'F. Establishment has adequate other cold holding for scope of business. Cooling and cold holding units must be at 41'F or below. Deli manager was instructed to move non-TCS items to other cold holding units. After discussion with the person in charge, it has been determined that the root cause of the violation was a faulty cooling unit, which resulted in the violation. PIC put in a work order to have it repaired at the time of inspection. PIC agreed to not use unit in question for TCS items until observed at or below 41'F.
