Spoke with manager via telephone. Per manager, establishment is still waiting for additional parts to fix their high temperature dishwasher. The establishment is using disposables for their customers and using the 3-compartment sink to wash, rinse, and sanitize equipment in the meantime. Spoke with kitchen manager via telephone regarding update on high-temperature warewashing unit. Per manager, new probe had been installed, but did not function properly. A new circuit board is needed, and was ordered on Wednesday May 22nd. Establishment is currently waiting for part to come in to complete repairs. Per manager, establishment is continuing to use disposables for food service and using 3-compartment sink to wash, rinse, and sanitize kitchen equipment. Will follow up next week.

Spoke with kitchen manager regarding high temperature warewashing unit. Technician was actively working on unit the morning of planned reinspection. Per manager, part was ordered necessary for repair. Will follow up at end of the week.
