Inspector's notes
Observed chocolate custard in the custard-making machine with an internal temperature of 53-56*F when measured with a probe thermometer. According to person in charge, custard had been in the machine for about an hour. All TCS (time and temperature controlled for safety) foods must have internal temperatures of 41*F and below. Custard was moved to walk-in at time of inspection. Corrective Action: Corrected at time of inspection.
