Observed internal temperature of arugula and ranch cups at 47°F inside prep cooler across from pizza oven. Ambient air temperature inside prep cooler observed at 47°F. Per Person in Charge (PIC), ranch cups and arugula had been inside prep cooler since night prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed keeping all TCS food items inside the working walk-in cooler until the issue keeping prep cooler from functioning correctly is fixed. Corrective Action: Corrected at time of inspection.

Observed cooked meat balls in hot holding unit with internal temperature of 118°F. Per manager meat balls were placed in unit about an hour prior. Manager reheated meat balls to 165°F.
