Inspector's notes
Observed pans of cooked potatoes and pans of cooked sausage that were covered and cooling in the walk-in cooler. Spoke with PIC and they were uncovered to allow airflow during the cooling process. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Observed chlorine sanitizer dish machine in use and not dispensing sanitizer. Dish machine will not be used to sanitize dishes until in good repair. The three compartment sink will be utilized for the sanitizing step. Discussed using test strips daily to ensure dish machine is in good repair.

Observed cooked sausage sitting out at room temperature near cook area. Per PIC, the intent with the sausage was to keep it warm and re-cook per orders. Sausage had a date mark from previous day and was recommended for discard. Discussed options such as time as control, cold holding, or hot holding.
