Observed two plastic containers more than 12 inches deep of red chile sauce at 45*F in walk-in. All other TCS foods were observed at or below 41*F. PIC stated red chile sauce was made yesterday. PIC stated that sauce is made by boiling water with dried red chiles and then blending. PIC discarded sauce. TCS foods must be cooled from 135-70*F within 2 hours and from 70-41*F within an additional 4 hours to prevent growth of pathogens. Correct By: Corrected At Time Of Inspection

Observed cooked scrambled eggs with vegetables, cooked chorizo, cooked peppers, cooked potatoes, cooked rotisserie chicken, cooked fried chicken, and cooked corn dogs in hot holding unit in deli at 97-127*F. Items were on right side of hot holding unit, right side of unit observed at 128*F. Left side of unit observed at 198*F. PIC will call tech to service right side of unit and will only stock left side of unit until able to hold TCS foods at 135*F or above. PIC stated items were in unit since 6am and 8am, more than 2 hours prior to inspection. PIC discarded items. TCS foods being hot held must be held at or above 135*F to prevent growth of pathogens.
