The person in charge stated the shredded carnitas had been cooked and placed for hot holding more than 2 hours ago and discarded the carnitas at the time of inspection. Observed cooked ribs, chicharon, carnitas, chicken wings, and potato wedges, and fried whole fish all with internal temperatures between 90F -129F. The person in charge stated the food items had been cooked and placed for hot holding less than 1.5 hours ago and reheated all the item to 165F.
