Corrective Action: Correct prior to re-inspection. The following areas need to be cleaned by the reinspection: 1. All metal surfaces along the hood wall including hood and baffle filters. 2. All air vents, and adjacent ceiling tiles along the ceiling of the establishment. 3. Black tiled wall behind the soda fountain. 4. The wall above/behind the reach-in freezer. 5. Observed two containers or precooked sausages on sticks in prep cooler at the main cook line to have date marks of 9/19 and 9/15. Confirmed with PIC that these dates are accurate and are for the date of preparation. The regular sausages with a prep date of 9/19 should have been discarded on 9/25. The spicy sausages with a prep date of 9/15 should have been discarded on 9/21. PIC voluntarily discarded items during inspection. Reviewed proper date marking and disposition with PIC, discussing that all TCS food items must be discarded 7 days after opening, cooking, or prepping. Correct By: Corrected At Time Of Inspection
