Observed custard filling at 60F, and ube custard filling at 54F. The filling is used for donuts. Employee said they had been on the counter for an hour. Employee put the custard back in the refrigerator. The PIC said the custard is made from liquid pasteurized egg combined with milk. Please note: this product is TCS due to the egg/milk combination and must be stored at 41F or below. Another option is to use 4 hour time as a control if desired. Corrective Action: Corrected at time of inspection.

Observed reduced oxygen packaging of fish, already thawed in fridge. Talked to manager about thawing process on those foods. Ensure that ROP fish in ROP packaging is fully removed from the packaging after thawed. Manager said will move to ziploc bags in the future. Core-3-304.14, C: Wiping Cloths, Use Limitation Observed the wiping cloth sanitizer buckets with <10ppm chlorine concentration. Per PIC, the amounts of Bleach are pre-measured. Discussed different concentration amounts for different types of bleach, as some brands are more concentrated than others. The buckets were filled to 50ppm concentration.
