Inspector's notes

Observed cooked rice placed on food prep bench with internal temperature of 78*F. Manager stated the rice was taken out from cold holding unit less than one hour prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Manager moved the cooked rice into walk-in refrigerator for fast cooling at time of inspection. Corrective Action: Corrected at time of inspection.

Manager stated the raw bean sprout was put in prep cooler less than two hours prior to inspection. Manager stated the above food items were prepared about one hour prior to inspection and the old hot unit was broken and new unit will be installed in 3 days. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Manager moved above food items in walk-in freezer for fast cooling at time of inspection. Corrective Action: Corrected at time of inspection.
