-- In walk-in refrigerator, observed containers/packages of broccoli soup, cooked ground beef, imitation crab, mash potatoes, pizza sauce, tzatziki sauce, black bean tacos, turkey meatballs, and raw ground beef with internal temperatures ranging between 45°F-51°F. The ambient temperature of unit measured between 50.7°F-53.2°F using min/max thermometer. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

The ambient temperature of walk-in refrigerator measured between 50.7°F-53.2°F using min/max thermometer. See violation above. All TCS foods that were received today and maintained temperatures at 41°F or less were moved to alternate refrigeration units until repairs can be completed. The TCS foods above 41°F were voluntarily discarded by the PIC. See embargo list for details. Informed the PIC that non-TCS foods such as baked goods, shelf-stable milks/creamers, whole fruits/vegetables, and shelf-stable condiments/jams/syrups can remain in the walk-in refrigerator. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. A case of liquid eggs were also observed. Reviewed HSP requirements: in facilities serving a highly susceptible population, raw shell eggs may only be used for hard boiling or as an ingredient in baking mix for shelf-stable products such as cakes, muffins, brownies, etc. The PIC stated they will order pasteurized eggs.
