Inspector's notes

Observed heavy build-up of black organic matter on interior plastic deflector of ice machine in the warewashing area of the back room. PIC burned down the ice and sanitized the plastic deflector at time of inspection. Ice machines must be cleaned frequently enough to prevent the accumulation of organic matter and mold. Discussed cleaning frequency with the PIC. Corrective Action: Corrected at time of inspection.

Butter measured at 76'F and has been out for more than 4 hours per PIC. TCS coldholding food items shall be stored at 41'F or below. Notified PIC that butter in question is TCS and shall be kept at 41'F or below and also be datemarked and be kept only for 7 days from (and including) day of opening. Scoop was moved by PIC at time of inspection in an upright manner with handle in the air. Observed cup with no handle being used as scooping equipment in rice bin. PIC removed cup from rice bin at time of inspection. Ensure scoops with handles are used and that the handle is not in contact with food to prevent contamination from the hands. Observed in-use knife being stored in between equipment. PIC had knife cleaned and sanitized at time of inspection.
