Advised PIC to have the backflow tested and repaired if not adequately protecting against backflow. Discussed that a stainless steel RPZ and all connecting components may not contain copper if the water is carbonated. If the device is located before the carbonator then a brass RPZ may be used.PIC stated stated they allow dogs on the patio but do not have a dog-friendly patio approved. Observed a damp wiping cloths under an in use cutting board to help prevent slipping. Also observed a damp wiping cloth stored next to the cutting board. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a container with cooked chicken chimichangas dated 10/25 and cooked beef mini tacos dated 10/28 in the standing refrigerator by the cooking station. Discussed with person in charge (PIC) that RTE/TCS foods requiring date marking must be sold or discarded after 7 days (including the day it was made as day 1).
