Inspector's notes

Observed the three three-compartment sink with the sanitizer basin filled with only water. Dishes had been washed and were drying on the side of the three-compartment sink. Staff stated the dishes had been washed and rinsed only. Re-educated staff on wash, rinse, and sanitize requirements for public food service. Food-contact surfaces must be properly sanitized after washing and rinsing. Staff to not skip the sanitizing steps. Alerted the manager who refilled the sanitizer basin with sanitizer at time of inspection. Food-contact surfaces were properly sanitized at time of inspection. Food-contact surfaces sanitized using quaternary ammonia must be sanitized with a contact time according to manufacturer specifications. Corrective Action: Corrected at time of inspection.
