Inspector's notes

Observed an in-use chlorine warewashing machine with a chlorine concentration of <50ppm. PIC attempted to reprime machine but was unable to reach a sanitizing concertation of chlorine. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. PIC will refrain from using warewashing machine until repaired to reach sanitizing levels of 50-100ppm of chlorine. Corrected at time of inspection.

Inspector's notes

Observed an ice machine with black, slimy, organic-like material growing on and behind deflector panel. Per PIC they use the ice in the machine for customer drinks. Educated PIC that ice is considered a food item and the ice in the machine was considered adulterated due to organic like growths. Instructed PIC on clean-in-place protocol and that all food-contact surfaces must be properly sanitized after washing and rinsing. Correct prior to next routine inspection. 4-601.11(A) - Priority Foundation: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils. Educated PIC that all food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Observed 0ppm of chlorine sanitizer at the mechanical warewashing machine that was actively sanitizing dishes. PIC ran machine again and checked chemical dispenser connections and there was no change to concentration. PIC directed kitchen associates to stop using the machine until a service technician can repair the machine. Establishment will use the three compartment sink for manual warewashing until unit can be repaired. Ensure the chlorine concentration is between 50ppm- 100ppm for active sanitizing of dishes.
