PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Observed multiple TCS food items (such as sliced deli meat, cheese blocks, and TCS sauces) in the walk-in cooler with internal temperatures between 47-53°F at the time of inspection. The ambient air temperature of this unit was ranging between 47-60°F (see violation 31). The Person in Charge (PIC) stated the temperature of this unit was less than 40°F less than 4 hours before the inspection time, but stated they do not check internal temperatures of foods in the walk-in, and therefore could not verify that the food items had internal temperatures less than 40°F before the inspection. All food in this unit that had been there for more than 4 hours was discarded at the time of inspection (see embargo form). Food that was in this unit for less than 4 hours was moved to a working prep-unit and walk-in freezer. This unit will not be used to store TCS food until it is repaired. Discussed cold holding policies, monitoring procedures, and public health risks with PIC. Ensure all food being maintained by cold holding has internal temperature of 41°F or below at all times. PIC stated the temperature was less than 40°F in this unit one hour before inspection time, but the temperature frequently goes above 40°F during operating hours due to the door being opened and closed for entry and exit of the walk-in cooler. A technician was scheduled and arrived for repairs at the time of inspection. A 24-hour reinspection will occur on Friday, February 2nd to ensure this violation is corrected and the walk-in cooler is able to maintain food with internal temperatures of 41°F or below at all times.
