PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection. Ambient temperature of the make line unit was 44F. The grill area was excessively hot likely contributing to the make line unit not being able to maintain proper temperatures. PIC stated that ice would be used to maintain TCS foods cold. Establishment has sufficient refrigeration.

Also observed cooked chicken on cook line at internal temperature of 112*F-119*, several pieces in same temperature range. Notified cook employee. Cook reheated cooked chicken to above 165*F.
