Observed large trays of cooked spinach covered tightly with plastic wrap, items measured 60 degrees F and were uncovered at time. Please ensure food items are cooled in shallow uncovered containers until they reach 41 degrees F before covering to allow for maximum heat exchange. Corrective Action: Corrected at time of inspection.
