Observed table-mounted can opener stored as clean with yellow/green dried food debris on the blade at time of inspection. Discussed cleaning frequency with PIC. PIC stated that the can opener had not been used today. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed to-go plastic bags being used to store seasoned beef in the two-door standing refrigerator at time of inspection. All items were transferred to proper food grade containers at the time of inspection. Discussed the importance of storing food in proper food grade containers to prevent the migration of deleterious substances. Use of non-food grade bags (including to-go bags and trash bags) is not approved for storage of open food items to prevent migration of deleterious substances. Corrective Action: Corrected at time of inspection.
