Inspector's notes
Observed two plastic cambros of cooked brisket, portioned in bags, stored on the bottom shelf of a two-door standing refrigerator at 48-50'F at time of inspection. PIC stated that brisket was thawed and portioned on Sunday, two days prior to inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed plastic cambro containing nacho cheese(92'F) being stored in a display warmer in the kitchen area. PIC stated that the commercially packaged nacho cheese was heated in the oven to 135'F about 1.5 hours prior to inspection. Discussed proper hot holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspection report was emailed to Branden.Prior to first routine inspection:1. Ensure hand wash water at sinks in restroom is mixed to be 100-110°F.2. Chemical dispensers are to be installed on dedicated water line, no y-valve, splitters ets may by used on mop faucet.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Also, checks and money orders are accepted via US Mail. Equipment inspection conducted with Site Superintendent, Marcos and Brandon.At the time of this inspection, this project was about 90% complete. Inspection report was emailed to Marcos.Prior to final:1. Provide hot water at all fixtures. (>110°F at 3 comp and prep sink/ 100-110°F at all hand wash sinks).2. Remove any unnecessary equipment.3. Ensure all refrigeration is holding at or below 41°F.Per management, chemical dispenser is not be to be added at mop sink. Cleaning chemicals will need to be hand dosed. If adding a chemical dispenser, then a separate dedicated water line will need to be added. Dispenser may not be directly attached to mop sink (including using a y-vlave, side kick, etc).Please continue with construction according to plans, stipulation letter, and inspections. Please call (602) 526-0917 for a final inspection at 100% completion of project or if an additional onsite walk-through is needed. Please also ensure you have read your Responsibilities to Qualify for a Permit document and are in compliance with all requirements before final inspection. A certified food manager is required at time of approval. If not already obtained, please obtain your certified food manager certificate from an ANSI approved testing company. All other food handlers must obtain ANSI approved food handler certificates. No county legal action will result from the inspection.
