Inspector's notes

Container of cooked chicken, cooked beef, and cooked coliflower had internal temperature of 120*F-130*F. The temperatures were verified by the person in charge (PIC) using the establishment's thermometer. The PIC did not know why the food was out temperature. The PIC sent the products back to main kitchen to be reheated to 165*F at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above.

In the hot box a container of cooked hamburger patties had internal of 117°F. The person verified the food temperature using the establishment's thermometer. The PIC did not know how long the food was out of temperature and/or if it was reheated properly. The food item was embargoed and voluntarily discarded by the PIC at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above.
