Any substance(s) added to food must be GRAS (Generally Recognized as Safe) and/or used consistent with all legal requirements. The permit holder is responsible for ensuring that their menu items comply. Education was provided on the addition of food additives and dietary supplements during the inspection. Chlorine sanitizer solution concentration at in-use 3-compartment sink was measured at 0ppm. Chlorine sanitizer solutions for food contact surfaces must be maintained at 50-100ppm. Person in charge (PIC) remade sanitizer solution during inspection and re-washed, rinsed, an sanitized recently cleaned utensils. Corrective Action: Corrected at time of inspection.

Observed fully cooked beef ribs stored in the 2-door standing refrigerator with a prep date of 10/6 at time of inspection. Discussed proper date-marking requirements with PIC. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed the following TCS food items stored in the open-top display hot holding wells: Carne asada(125'F), cooked whole chicken(105'F), and cooked pork ribs(110'F). Per PIC, all TCS food items in questions were placed in the hot holding wells about 1.5 hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.
