-- Server observed using their bare hands to retrieve toast from toaster oven to place on plate for consumption. Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. Reviewed suitable utensil requirements for RTE foods: Wash hands per code and shall not contact exposed RTE foods with bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. Requested the RTE food that was contacted by bare hands be discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

The dishwasher was ran multiple times and the sanitation levels consistently tested under 50ppm. At the time of inspection, the person in charge (PIC) placed a work order for dishwasher repairs. A re-inspection will be conducted on January 18th, 2024 to verify repairs have been completed. Please ensure employees are utilizing test strips to verify dishes are getting properly sanitized.
