In milk/creamer refrigerator/45.1F, observed TCS food holding at 45-49F (using a calibrated probe thermometer) including non-fat milk, half and half, whipped cream, and whole milk. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Beverage items were voluntarily discarded and staff will use another properly operating refrigerator until this unit is repaired. 3rd Consecutive Violation. Corrective Action: Corrected at time of inspection.

Observed hummus/57F and leafy green spring mix/60F in undercounter refrigerator/54F and yogurt/51F and goat cheese/48F in small domestic refrigerator. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held beyond acceptable time parameters were immediately voluntarily discarded by PIC at time of inspection. Staff to use other properly functioning refrigerator until repairs are completed, and will monitor to ensure proper temperatures are maintained. Corrective Action: Corrected at time of inspection.

RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
