Observed dishes sanitized with 0ppm chlorine sanitizer from the mechanical dishwasher. Per PIC, the supply container was observed with too little sanitizer to drawl into the tubing. PIC replaced the sanitizer bucket at the time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (50-100ppm chlorine sanitizer). Food-contact surfaces were properly sanitized at time of inspection. Observed the dishwasher and ice machine drain lines stored below the flood rim of the floor sinks. Drain line must maintain a 1 inch air gap above the flood rim of the floor sink. Observed the hand sink drain line misaligned over the floor sink so gray water partially runs onto the floor. Must repair all plumbing to a state of good repair prior to next routine inspection. All plumbing must be maintained in good repair at all times. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law ------ Observed the floor sink servicing the hand sink and rinse basin near the dishwasher in disrepair so that the drain is completely stopped. Establishment is in the process of repairing the dishwasher so the area is not in use. PIC placed an emergency work order on the drain at the time of inspection. Discussed that plumbing must be maintained in good repair and according to law and that all wastewater must fully drain into an approved sewer system. A re-inspection will be conductedon 11/13/2023 to ensure that the floor sink has been fixed is returned to normal functionality. PIC stated the drain has become stuck several time in recent weeks and is being monitored. Advised PIC to replace drain line and utilize the 3 comp sink in the main area of the kitchen until repairs are completed. Advised PIC to self-close and notify the department is the drain is observed backing up. Correct By: Correct Prior To Reinspection
