#20 — Proper Cooling Time and TemperaturesPriority3-501.14

Inspector's notes

In the walk in cooler, observed two covered and stacked plastic containers of cooling chicken wings with internal temperatures ranging from 44-58*F and 50-68*F. PIC stated the top bin was prepared yesterday and the lower bin was prepared at 7am. PIC stated the wings are blanched, air cooled, moved to the freezer until they reach about 70*F and then placed in the walk in covered. Also observed cooling chili measuring 44*F internally. Per PIC, the chili was cooled overnight in a large, plastic container with more than 12 inches of cooling food inside. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Provided cooling methods guidance document. Corrective Action: Corrected at time of inspection.

In the reach in under the cold table across from fryers, observed a container of cooked noodles and container of raw fish with an internal temperature range of 45-48 degrees F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by Person in charge (PIC) at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a container of chorizo gravy with date mark of 07/17 in the reach in across from the fryers. In the cooler next to the handwashing sink at server station, observed whipped cream with date mark of 06/27 and cream cheese frosting with date mark of 07/14. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.
