Observed food employee press down on raw meat and potato mix on flat top grill with the intent to handle ready-to-eat (RTE) foods. Informed Person-in-charge (PIC), who instructed employee to pause before touching any RTE foods. PIC instructed employee to properly wash hands and change gloves before proceeding. Spoke with PIC regarding the importance of proper hand washing and when hand washing is required. Hands must be washed at any time contamination occurs and when changing tasks. Informed PIC and employee to utilize a spatula to press down raw meat instead. Corrective Action: Corrected at time of inspection.

PIC divided shredded chicken into two shallow pans to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
