Cooked oatmeal from breakfast stored in upright refrigerator at end of cookline in a deep container with a plastic lid. Oatmeal measured at 87 deg F still within the cooling time frames. Person in charge placed oatmeal in a shallow pan then placed it in the walk in cooler to be cooled more rapidly. 3-501.15 (A) - Priority Foundation: Cooling Methods. Cooked gluten free pasta stored in a container of water at 73 Deg F during lunch sitting on a prep table. Person in charge stated it was for dinner and it had only been out about 10 minutes. PIC immediately added ice to the container of noodles and placed them in the walk and cooled to 41 Deg F. Discussed proper hot holding of pasta. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Also observed the cook handle soiled dishes then clean dishes, and use gloved hands to crack raw shell eggs, change gloves, then immediately begin to plate food, without washing hands. Discussed the importance of washing hands after contamination and prior to handling clean utensils, food etc. in order to prevent the transfer of pathogens. PIC will retrain employees on proper handwashing and when to wash. The hands are particularly important in transmitting foodborne pathogens. Food employees with dirty hands and/or fingernails may contaminate the food being prepared. Therefore, any activity which may contaminate the hands must be followed by thorough handwashing in accordance with the procedures outlined in the Food Code.
