Observed 2 deep containers of green salsa in the walk-in with a center temperature of 51*F measured with a probing thermometer. Per PIC the salsa was made 2 hours prior to inspection. Discussed with PIC TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC relocated the salsa to shallow pans at time of inspection. Corrective Action: Corrected at time of inspection.

PIC put the containers of red and green salsa in the walk-in cooler to rapid cool and also replaced ice in cold holding unit of the salsa station at time of inspection.
