Inspector's notes

Observed butters and heavy cream with internal temperatures between 47°F and 52°F in walk-in cooler. PIC states they were delivered in the morning around 4 hours prior to inspection and were moved to an alternate functioning cold holding unit to rapidly cool. Observed dairy-based pies such as banana creme pies and cheesecakes from Sunday, 8/23. All TCS items in walk-in delivered before day of inspection were discarded by PIC. Corrective Action: Corrected at time of inspection.

Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct within 24 hours. Reinspection for walk-in cooler will occur on 8/26/26.
