Observed covered and stacked containers of cheese cooling in walk-in with internal temperature range of 42-47*F. Discussed the importance of air circulation during the cooling process. The cheese was with proper cooling parameters. PIC re-arranged the containers to promote rapid cooling. Corrective Action: Correct prior to next routine inspection.
