Observed house made cold brew coffee sitting out on service counter in a black Cambro at 64*f degrees. PIC stated that coffee is made cold over night in fridge and brought out to come to room temperature when shift starts for customer quality. Discussed with PIC the option of serving cold or creating a time control policy and labeling start and discard times for a maximum of 4 hours. This is required per county policy to leave TCS foods out of temperature. House made cold brew is categorized as a TCS food. Cold brew was discarded at time of inspection due to it being out of temperature for more than 4 hours. Time control template provided to PIC via email.

Observed raw eggs stored on the shelf above muffin batter and cold brew inside of the reach in fridge near the back of the store. All raw food products must be stored in a manner that prevents potential cross contamination to Ready to Eat Time/Temperature Control for Safety food products. PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals Observed the sanitizer compartment of the three compartment sink with a chlorine concentration of over 200ppm. All sanitizer concentrations for chlorine solutions must be 50-100ppm in order to properly sanitize food contact surfaces. The PIC drained and remade the solution to reach a proper concentration.
