Inspector's notes

Observed a 6" + deep covered container of separated meatballs in the walk-in refrigerator at 50-51 Deg. F. Per operator the product had been in the walk-in since earlier in the morning for an unknown amount of time. Product was embargoed. Observed three containers of pre-portioned cooked pasta at 64 Deg. F. in the walk-in. Per operator they were placed in the unit approximately two hours prior. The operator opened the bags of pasta and placed them on a sheet pan in the walk-in freezer to facilitate proper cooling at the time of inspection. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed sliced sausages in a prep table with temperature of 60 degrees Fahrenheit at the time of inspection. Per kitchen manager, sausages had been in there less than 2 hours prior to inspection and were moved down below to cool to 41 degrees Fahrenheit. Also observed portioned spaghetti noodles between 53 and 57 degrees Fahrenheit. Kitchen manager moved these to the walk in refrigerator to cool at the time of inspection. TCS foods shall be held at 41 degrees Fahrenheit or below to prevent microbial growth. Corrective Action: Corrected at time of inspection.
