Observed strawberry shortcake, Nafta, Drop kick and fried ice cream named doughnuts cold holding in bakery retail case at internal temperature of 67-68 deg F. The interior of these doughnuts contains heavy whipped cream filling that is not shelf stable. The strawberry shortcake doughnut also contains condensed skim milk topping for the top of doughnut.. The doughnuts had been on retail shelving a short time prior and manager placed in freezer for rapid cooling. Manager has prepared a time as a control procedure for these items and going forward will use this procedure. Correct By: Corrected At Time Of Inspection
