Observed raw fish, buttermilk, butter, cooked potatoes, and pork in standing fridge and prep cooler by the cook line with internal temperatures 44*F-48*F at 11:15am. PIC stated items had been in the fridge since 9am. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Internal temperatures of the food were taken in the alternative refrigerator at 12:30pm (41*F). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
