Observed a container of cold brew at 53*F located in a small cold holding unit in the coffee bar. The PIC stated the cold brew was brewed over night at room temperature and just placed into the fridge. Time/temperature control for safety food should be cold held at 41*F or lower to prevent the growth of pathogens. Discussed obtaining a variance for brewing cold brew at room temperature. The PIC prefers to brew in the fridge moving forward. Provided cold brew handout. Corrective Action: Corrected at time of inspection.

The establishment does not have a prep sink and is listed as a Class 2 E&D. The establishment is operating outside the scope of their permit. The PIC has decided to immediately stop selling the sandwiches. The PIC is aware if they would like to sell the sandwiches, they would need to purchase the meat from a food supplier ie restaurant depot, and install a prep sink to wash the vegetables. The installation of the prep sink would require a remodel permit, the link was provided in the email.
