Observed two pots of beans in walk in fridge made 10 days ago. Person in charge states they forgot to discard food. Ready to eat foods prepared to be thrown away with the day it was prepared counting as day one. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed oysters in a bag with no shellstock tags attached. The person in charge stated the oysters come in a box but the box was discarded. The person in charge provided the shell stock tags pertaining to the oysters in the bag. Discussed shellstock tags or labels shall remain attached to the container in which the Shellstock are received until the container is empty. Observed oyster shell stock tags with no date mark indicating the first day and last day sold. Discussed the date when the fist and last Shellstock from container is sold or served shall be recorded on the tag or label and maintain and retain tags for 90 calendar days from date recorded on tag or label using an approved record keeping system that keeps records in a chronological order. If from a supplier, a written agreement or statement from the supplier stipulating that the fish are frozen to a temperature for specified time must be retained on site of the operation.
