Observed some organic matter and other dust/lint on the inside of the ice cream cases on the inner rim. Discussed with person in charge to clean the inside of the ice cream case on a more frequent basis to minimize the accumulation dust/lint/organic matter inside the case. The person in charge will clean the ice cream case. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
