Observed salmon in the reach-in fridge defrosted inside of its sealed ROP packaging. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed teriyaki chicken bowl 45-46*F, orange chicken 46*F, teriyaki beef 44*F, dumplings 47*F, potstickers 46*F in the cold holding case at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, cold holding unit went through defrost cycle 10 minutes prior to inspection. Per employees, temperatures were taken of the TCS food items 2 hours prior and TCS food items were 41*For below. Unit is at 41*F per inspectors thermometer. Corrective Action: Corrected at time of inspection.
